Ingredients

1-1/2 cups milk
1/4 cup apple cider vinegar
2 cups UNBLEACHED all-purpose flour
1/4 cup flax seed meal
1/4 cup farina
2 Tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon sea salt
2 eggs
1/4 cup sunflower oil
Cooking time: 60 Serving: 6-8 people

I make these quite frequently, usually doubling to have some leftovers for the upcoming week! Sometimes I add shredded apples, mashed bananas or blueberries. The flaxseed meal adds a considerable amount of healthy healthy omega-3’s and the farina lends some crispiness.

DIRECTIONS

Combine milk and vinegar in a small bowl, and allow it to “curdle” while you prepare the dry ingredients.

In a large bowl, sift together all dry ingredients. Mix in milk, eggs and oil. Allow to sit for 5-7 minutes. Cook pancakes on lightly oiled griddle on medium heat until golden brown on both sides.
