1 cup old fashioned oatmeal
1-1/2 cups warm milk or your favorite alternative
3 cups garbanzo(chickpea) flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon sea salt
1/4 cup cold butter or your favorite alternative
1 egg, lightly beaten
Cooking time: 1 hour 10 Serving: 6 people

A great recipe for gluten free soda bread for those who cannot tolerate gluten in their diets, or a high protein alternative.

I admit it…I was afraid. I was wary of bean flour. But, goodness. I was SO wrong. Where have you bean all my life garbanzo flour? Due to many requests for gluten free recipes, I have concocted a way to enjoy soda bread without gluten! It is SO good.

Preheat oven to 375°F. In a small bowl, pour warmed milk over oats and let them stand while you prepare the rest of the ingredients. In a large bowl, combine garbanzo flour, baking powder, baking soda and salt. Using a pastry cutter, cut in cold butter until well combined and resembling wet sand. Add oatmeal/milk mixture and egg to flour mixture and stir just until combined. Grease and flour a loaf pan and transfer dough into pan. Bake for 50 minutes. Allow to cool for 20 minutes before slicing.
