Ingredients

2 slices fresh bread, I used homemade
1 garlic clove, sliced in half
2 ounces garlic & herb goat cheese
2 slices roasted turkey
1 cucumber, thinly sliced
sea salt and freshly cracked pepper
Cooking time: 10 minutes Serving: 2 people

I just had to share one of my favorite snacks / light lunches. I first tried chevre about 15 years ago while staying at a friends’ house in Philadelphia. It’s been love ever since. A staple cheese in my fridge! IMG_6784

DIRECTIONS

Slice the bread about 1″ thick and place under broiler until lightly crispy.

Turn bread and allow to toast on the opposite side. Remove from broiler and rub garlic on one side.

 

Spread chevre on each slice:

IMG_6796Top each with a slice of turkey; I prefer Applegate Brand for the obvious reasons.

Top with thinly sliced cucumbers. IMG_6811

 

Sprinkle with freshly cracked pepper and salt to taste, and enjoy! I couldn’t resist taking a bite out of it (apologies!)
