2 cups bran flakes cereal
1 1/4 cups milk
3/4 cups UNBLEACHED all-purpose flour
1/2 cup whole wheat flour
1/4 cup flaxseed meal
1 Tablespoon baking powder
1/2 teaspoon salt
1 very ripe banana, mashed
1 egg
1/4 cup oil of your choice
1/2 cup brown sugar
2 cups fresh or frozen blueberries

DIRECTIONS
In a medium bowl (or large measuring cup) pour milk over bran flakes and allow to sit for 20-25 minutes or until the flakes have absorbed the milk.
In a large bowl, mash the banana thoroughly. Whisk in egg and oil.
Add sugar and whisk until well combined.
Mix bran flake mixture into egg mixture. In another medium bowl, sift together flours, flaxseed meal, baking powder and salt. Mix into egg mixture.
Fold in blueberries.
Spoon evenly into lined 12-cup muffin pan.
Bake at 400°F for 20-25 minutes or until golden brown on tops.
