1 cup jasmine rice
2 cups chicken broth
2 Tablespoons olive oil
1 cup sliced mushrooms
1/2 medium onion, chopped
2 teaspoons cumin
Blackpepper to taste
3 cups sliced sausage or keilbasa of your choice (I used chicken breakfast sausage)
1 carrot, shredded
2 cups canned black eyed peas
1/2 cup your favorite salsa
1/2 green pepper, sliced
1/2 cup chopped cilantro
2 cups pepperjack cheese, shredded

Black eyed peas are said to bring luck to everyone who eats them on New Years Day, not only is this a tradition in the southern United States, but they are also believed to bring prosperity on Rosh Hashana (Jewish New Year). In fact, this tradition was probably brought to the US by Jewish immigrants, and adapted by the locals.
Here is a recipe for this delicious dish.
DIRECTIONS
Cook rice as per package directions, substituting chicken broth for water. Heat olive oil in large pan and add mushrooms and onions. Saute for 5-7 minutes. Add cumin, black pepper and sausage. Cook for 10-15 minutes more, or until sausage is browned. Remove from heat and allow to cool for 10 minutes. In a large bowl combine carrot, beans, rice, sausage mixture, salsa, green pepper, cilantro and 1 cup of the pepper jack cheese in a large bowl. Press into lightly greased baking pan. Sprinkle with remaining cheese. Bake loosely covered at 400°F for 25-30 minutes.
