2 ripe avocados
3/4 + 1/2 cup semi sweet chocolate chips
1 Tablespoon extra virgin coconut oil
1 cup brown sugar
1/3 cup unsweetened baking cocoa powder
2 teaspoons vanilla extract
2 Tablespoons garbanzo(chickpea) flour
3 large eggs
1/2 teaspoon each baking soda, baking powder and sea salt

Avocado brownies are a healthy (ok, maybe a mean) trick to play on your kids or those who don’t like vegetables to get them to ingest something green besides artificially flavored candy/cereal/drinks. My kids didn’t even notice a difference until we played “name the secret ingredient”.
Make these brownies a day ahead of time for maximum tastiness.
Preheat oven to 350° F. Peel avocados and remove stones. Beat on high in large bowl until they are completely smooth, taking time to scrape the bowl. You don’t want the children to figure out what these are REALLY made out of by discovering a chunk of green stuff in their brownies. Melt chocolate chips with coconut oil in double boiler until melted. Allow to cool slightly, 4-5 minutes. Combine with avocados, again, being careful with scraping. Mix in the brown sugar, cocoa powder, vanilla extract, garbanzo flour, eggs, baking soda, baking powder and salt. Fold in 1/2 cup chocolate chips. Pour the batter into an 8″ square baking pan, and even out the surface. Bake for 1 hour. Cool completely before serving.
